Prepare 25+ charcoal briquettes in a charcoal chimney to create the heat source. I like to light a few extra for swap-outs.
Put the apple pie filling into the bottom of a lined Dutch oven and spread it out evenly. Next, spread the spice cake mix over the top of the apple pie filling.
Slowly pour a 12-oz can of ginger ale over the cake mix, covering it completely.
Cut the butter into small pieces and scatter them over the top of the cobbler mix. If you like pecans, sprinkle some chopped pecans over the butter.
Cover the Dutch oven. Place the oven over a small circle of 8 coals—space out 17 coals on the lid.
Bake for 45-50 minutes or until the cobbler is golden brown and the filling is bubbly.
Once the cobbler is done, remove the Dutch oven from the heat and let it cool for a few minutes. Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream on top.
This cobbler is sure to be a hit with your family and friends! Substitute the apple with peach pie filling for a different dessert.
