Breakfast Foil Packets Recipe

This simple meal has the following ingredients:

  • Eggs
  • Breakfast meat
  • Potatoes
  • Optional: Shredded Cheese
  • Salt and pepper

How to Make Breakfast Foil Packs

These packets can be done in two ways. You can pre-cook the meat and potatoes before assembling them or cook them in the packets before adding eggs. We show the pre-cook method here.

This is great as the second-morning breakfast, so you can cook the meat and potatoes beforehand.

We often camp Friday evening through midday Sunday, so we cook the sausage or bacon on Saturday morning or at lunch. Then, on Saturday night, we throw a few potatoes wrapped in foil lined with parchment paper into the campfire coals. Both the meat and potatoes are stored in the cooler overnight.

Whoever gets up first on Sunday morning starts the fire, so we have hot coals for cooking. A bonus is hanging out by the campfire with coffee after waking up.

Now, it is time to assemble the packets. Prep by lining pieces of foil with parchment to prevent aluminum from leaching into the food.

Chop the cooked potatoes and meat into the parchment, leaving a space in between. Break two eggs into that space.

Sprinkle salt and pepper or any desired spices on the eggs and potatoes. We used a spice blend.

Close the foil packet, leaving a dome over the eggs. Place on the grate over the campfire for 5-15 minutes. The time depends on how hot the fire is and how runny you want your eggs.

It will take longer if your coals are not hot enough or the packet is too far from the heat.

An alternative is to place the packet on the grill with medium-high heat. In this case, sunny-side-up eggs should take 3 to 6 minutes. In a 400° oven, it is even shorter.

Remove the packet when the eggs are done and sprinkle with shredded cheese if desired. Close the packet back up to provide heat to melt the cheese.
