Mountain Man Breakfast
The ingredients for this breakfast include ground sausage, eggs, regular or sweet potatoes, and cheese. We keep this recipe low-carb by using sweet potatoes.
I listed a package of cheese in the recipe. Feel free to pick the size of the package. Eric loves cheese, so we used a big bag.
For this recipe, whole potatoes need to be prepared ahead of time. We cooked the potatoes in foil over the coals the night before, baking them only long enough to make them soft enough to cut in the morning.
Eric is an early riser, so he prepped this ahead of time while the rest of us were still sleeping!
The breakfast takes 25-45 minutes or more, depending on your heat.
We pulled the lid at about the 25-minute to see how cooked the eggs were but had to let it cook longer.
We cooked this in Colorado, where it was dry, and we got better coals, which cooked faster. The previous summer, we were in the south, where it was very humid, and it took much longer to cook this.
I love how this recipe can be adapted to different varieties of sausage and potatoes.
We’ve done it several times with hash browns (we had to make it the day after we went to the store because our RV doesn’t have a freezer), but we much prefer it with actual potatoes. Sweet potatoes are pictured in this post.
The last time we made this on vacation, we wrapped the leftovers in our Dutch Oven Liner and put them in our cooler. It made for a great lunch when we were out exploring.

Mountain Man Breakfast in Dutch Oven
Create this hearty camping breakfast in the dutch oven.
Ingredients
- 1 lb ground sausage
- 1 dozen eggs
- 3-4 small regular or sweet potatoes or hash browns
- package of cheddar cheese
Instructions
- If using whole potatoes, cook them ahead of time.
- Cook the ground sausage in the bottom of the (open) dutch oven over the fire. No need to drain the grease.
- While the sausage is cooking beat the eggs in a separate bowl and chop the potatoes.
- Put the potatoes on top of the sausage. Pour the egg mixture on top of that.
- Cover with desired amount of cheese.
- Place lid on dutch oven, cover with coals, and bake for 25-45 minutes depending on your heat.
- We pulled the lid at about the 25 minute mark to see how cooked the eggs were and then left it on longer.

How did you brown the sausage with the Dutch Oven liner in? Can you do that, or do you have to brown it, remove it from the oven and then put back in with the liner? Thanks for all you do for us!!
